Poha Dosa

Poha (atukulu) -1 cup
Raw Rice -2 cups
Buttermilk -2 cups (quantity required to soak poha and raw rice)
Fenugreek seeds- 7 seeds


Procedure
  • Soak the poha and rice for 8 hours and then grind to make a paste.
  • Do not make the paste watery.
  • Keep aside the batter overnight to ferment.
  • Next day while making the dosas add salt and  required water to get consistency.
  • Now heat the tawa, then add batter on to tawa and make small dosas. Keep lid on the dosa and cook it.  Turn over the dosa when done on one side.
  • Enjoy the hot dosa with chutney of your choice.

Spicy chicken churry

Spicy Chicken Curry

Bored of having regular vegetable curries in this winter season. Then here is a simple recipe of spicy chicken curry. My friends love this dish. Try out this spicy dish and receive a lot of compliments.




Chicken- Whole Chicken (1.5 lbs)
Sriracha Sauce: 2 teaspoons
Tomato Ketchup: 1 teaspoon
Red Chilli Powder: 3-4 tablespoon
Green chilli: 4 (small)
Oil: 3-4 tablespoon
Pepper: 3/4 teaspoon
Salt: According to taste
Onion: 1 medium size
Mint leaves: few
Coriander leaves: 1 small bowl
Curd: 4 tablespoons
Cinnamon: 1 stick
Clove: 4
Cardamom: 4
Ginger garlic paste: 2 teaspoon
lemon: 1
Dry Coconut powder: 2 teaspoon
Turmeric: 1/2 teaspoon

Procedure:

  •  Marinate the chicken with curd, red chilli powder, salt, lemon juice, mint leaves, little bit of pepper, ginger garlic paste, turmeric
  • Keep the marinated chicken aside for atleast 1 hr in refrigerator
  • Pour oil in kadai,then add cinnamon,clove,cardamom. Now add green chillies and onion, Saute the onions till light brown in colour.
  • Now add chicken and let it cook with lid on 20 mins. After water comes from chicken then add sriracha sauce, tomato ketchup and remaining pepper powder
  • At this point check if chicken is boiled and adjust the taste. Now add dry coconut powder.
  • Check the consistency for the gravy.
  • Just before serving the dish add coriander leaves
Enjoy this spicy chicken curry with Rice or Roti. Cook the dish in medium flame as it gives more taste. Please adjust the spiciness according to your taste.

INDIAN  FRIED RICE 

This is a simple dish which requires very few ingredients. I learned this from my  mother who learnt from her mother.  This dish item was invented with left over rice. It is a very tasty dish and my husband loves this one.

Preparation Time: 10 min
Cooking time : 20-30 min



Ingredients: 

3- green chillies
3 cups - cooked rice
5 - curry leaves
pinch of turmeric
 2 eggs
1- onion
coriander according to taste
Salt according to taste

Procedure: 

Heat oil in deep non stick pan. Now add Cumin, mustard seeds after the oil is heated. Then add green chillies and curry leaves. Now fry the onions until they are soft. Keep the onion, chillies  and curry leaves to one side of the pan and then beat the eggs in the eggs in other side of the pan and scramble them. Add salt and pepper to the egg according to taste.

Once the eggs are ready mix them with onion, chilly and curry leaves. Add turmeric and then add cooked rice and mix well till all the ingredients are properly mixed. Keep the flame on low. Now add some coriander for garnish. The tasty  dish all ready to be served. Enjoy

STUFFED BHINDI


This is a lady's finger stuffed recipe. This is a perfect option for the ones who don't eat onions and garlic. I wanted to try this dish as I was bored of eating regular curries. This recipe is very simple  and requires very few ingredients. 


Preparation: 15 mins
Cooking time: 40 mins
Total time: 55 mins







Ingredients:


  • Besan (chenigapindi): 2 cups
  • Turmeric Powder: 1 tb spoon
  • Salt: according to taste
  • Water: As required to make semi solid paste
  • Chili Powder: 2-3 tb spoon (i like spicy food)
  • Lady's Finger (okra): around 20-30 count
  • Coriander Powder : 2 tb spoons
  • Oil: for frying


Procedure:

Besan Paste: In a container add the all dry ingredients (besan, turmeric powder, salt, chili powder, coriander powder).  The add water little by little and make semi liquid paste. Do not make the paste runny. Check for the chili powder and salt and then make slits in lady's finger and stuff the paste.

Main Dish: First microwave the stuffed lady's finger for 4mins. Now heat 3 tablespoon oil in pain and add the stuffed lady's finger and cook on sim for 15-20 mins with lid closed. Keep mixing the stuffed lady's finger so prevent it from burning and also to ensure overall cooking. After 20 mins take off the lid and keep the stove on high for 30-60 sec. Keeping the dish on stove high makes the dish crispy.
After 30-60sec the yummy delicious stuffed Bhindi is ready to eat.

Hara Bara Kabab

HARA BARA KABAB

This is a snack item and very healthy. this kabab is made from Spinach, peas and potato. Usually for cocktails people take either peanuts or cashews. I thought why don't we have something healthy with the cocktails.
Kids generally do not like spinach, but I bet you once given in this kabab style they would love it and ask for more.
I have tried this kabab for get together with my friends and they loved it.


Ingredients:
3 cups- palak
2 Boiled -Potatoes
1 cup boiled fresh or frozen peas
2 green chillies paste( add according to your spice requirements)
1/2 cup coriander finely chopped
2-3 spoons of corn flour( able to make kabab)
2-3 spoons breadcrumbs( optional)
Chat masala ( as per taste)
Salt( as per taste)
2-3 spoons of oil for shallow frying

Method

1.Boil the spinach in hot water for a minute and immediately transfer into cold water to prevent it from further cooking. now keep this aside

2. Boil the green peas and potatoes in pressure cooker until the potatoes are soft but not mushy.

3. Now mix the boiled spinach, peas and potatoes together with the help of a masher.

4. To the above mixture add green chilies paste, chat masala salt and cornflour and bread crumbs. Mix the ingredients well so that they form in the shape of kababs

5. Now shallow fry them on both sides till thy are slightly golden brown.

6. Hot and delicious kababs are ready to eat. We can have them with tomato ketchup.
